100% Pigato. Produced from hand-picked Pigato from 30-year old vines at 100m altitude, with a south-west aspect. The grapes are kept on skins for 3 days in steel tanks to extract more flavour and complex structural components, before fermentation and 12 months of élevage in tank to cohere. The wine spends another 12 months in bottle before release. R&R
