Cortese

Cortese is grown across northern Italy, though mostly in Piedmont where it reaches its apotheosis in the famous DOCG, Gavi. Cortese has a relatively simple flavour profile whose transparency conveys minerality well – especially reflected in the better Gavi sites – and retains acidity in good measure, though in cool conditions ripeness can be a challenge.
