The Tessari family have been producing Soave at their La Cappuccina estate in Costalunga Monteforte d’Alpone (one of the original zones) since 1890. Organic since 1985, La Cappuccina’s vineyards have a dense planting scheme for the region, and they rigorously pursue lower yields with modifications to the traditional Pergola Veronese trellis and the introduction of more frugal systems like Guyot and spur cordon pruning.
Although many estates include significant portions of the superior Trebbiano di Soave and the unremittingly dull Trebbiano di Toscano, as well as Chardonnay and Pinot Bianco, La Cappuccina maintain the integrity of their wines with almost exclusive use of Garganega – the exception being a small amount of the traditional Trebbiano di Soave in their Fontégo Soave.
Currently run by siblings, Sisto, Pietro and Elena, La Cappuccina has recently finished an immaculate new winery where modern equipment allows Pietro to reflect their historic, basalt-rich land with transparent, pristine winemaking.
