Although the Audarya estate is a relatively new estate, it is underpinned by significant familial tradition and comprised of vineyard land with vines of meaningful maturity. Although the Audarya estate is a relatively new estate, it is underpinned by significant familial tradition and comprised of vineyard land with vines of meaningful maturity. In many ways, Audarya is the passing of the baton from one generation to the next, with Enrico Pala establishing the estate for his children, Nicoletta and Salvatore. Enrico and his brother ran the family estate for many years – his brother still does – after taking over from their father, Salvatore, who founded it some 60 years ago. This deep connection to tradition underscores the philosophy at Audarya, with only indigenous grapes employed.

The 37-hectare estate is divided into four vineyards, Audarya, Acquasassa, Is Crabilis and Su Stani, with a mix of clay, clay-limestone, sandy and calcareous-sandy soils. The vines are traditional bush vines and viticulture and harvesting is meticulous and manual, with an absolute emphasis placed on fruit quality and health. In the winery, modern techniques are used to ensure purity in the wines, with the redominant use of stainless steel for fermentation and ageing.
