Ferghettina’s pinnacle cuvee, made from a selection of the finest parcels of Chardonnay across their vineyards. The fruit is hand-picked and gently pressed before free-run juice is fermented coolly in stainless steel, with the individual parcels all kept separate until the following spring. Once assembled, the wine undergoes its secondary fermentation in bottle and rests on its lees for seven years before disgorgement. No dosage is added. R&R
