The ancient Italian Breed of dog known as Lagotto Romagnolo has an unsurpassed ability to sniff out i Tartufi. The truffle season in Italy, which happens at the same time as the grape harvest in October, is also the wild mushroom season and the game bird season. In the wine country in the area known as the Langhe in and around the gastronomic enclaves of Alba, Asti and Monferrato is where you will find the rare white truffle. The October truffle fair in Alba is a great attraction for gourmets. In the autumn they appear in restaurants in almost every dish. Dishes such as Uovo en cocotte, Tajarin con tartufo or Carne Cruda con tartufo. 

Truffles are found in the North of Italy and as far south as Umbria and Puglia where they are dark in colour. A fabulous statistic is that 80 percent of dog owners love wine. Here are some super pairings for white truffles….or just great wines to try!
