The vineyards are managed meticulously and manually, with great emphasis placed on producing healthy and optimally ripe grapes. In the cantina, practices are an admixture of the modern and the traditional, with no recipe applied, but rather an approach that is responsive to site, vine age and vintage vagaries. Both small and large-format oak is employed.
