The Cult of Well-Being
From my time in Emilia Romagna, the people eat more, drink more and talk more about food and wine than anywhere else in Italy. Bologna became famous for gastronomy when the university opened in the 12th century. Her reputation as the gastronomic capital of Italy has flourished ever since. Rich, abundant, opulent but also elaborate and refined dishes is what we see today. Its food production is regarded as the best borne by rich alluvial soils. The same can said for Emilia's wines which pair perfectly with Prosciutti di Parma, Parmigiano Reggiano, hand made Pasta, Roasted Meats such as Hare...it is truely il culto del benessere...
