95% Prugnolo Gentile (Sangiovese), 5% Mammolo. Some years back, Massimo’s experiment with subtle tweaks to the Vino Nobile cepage – by only using Mammolo as an adjunct to the Sangiovese – and the aging process – which saw him experiment with tonneaux and also to reduce the time in oak from 24 months to 18 months – resulted in the birth of ‘Lipitiresco’. A wine that he releases much later than the rules dictate, and one that has the capacity to age as well as his riserva. R&R
