100% Monica. Sourced from the Audarya vineyard, in Serdiana, planted to clay-limestone soils at about 200 metres, with a vine age of about 20 years. The fruit is hand harvested into 20kg crates, then the grapes are carefully selected in the winery to ensure pristine condition. The grapes are cold soaked, before fermentation in stainless steel for 15-18 days at about 23°C. The wine is refined in tank on its lees before bottling. R&R
