Valpolicella Classico Superiore DOC

70% Corvina, 20% Corvinone, 10% Rondinella and other indigenous varieties. The vineyards are situated on hillsides around Marano with easterly aspects, and range from 150 to 300m above sea level. The soils are rugged and rocky and are mainly comprised of clay and limestone. The organically managed fruit is hand-picked, before fermentation in stainless steel tanks, with the temperatures regulated below 25°C. The wine is then re-fermented on the Amarone and Ripasso pressings before being aged in 30hl barrels for 18 months.
