Perhaps a vineyard on the side of an active volcano in sun-drenched Sicily won’t make everyone think cool climate, however on ancient wind-swept terraces at extreme elevation, the conditions on Mt Etna are just that.

Situated on the east coast of Sicily, Mt Etna is one of the world’s most active volcanoes and as such is an ominous and constant threat to the people and their labours. But, consistent with Italy’s complex charm, it is an essential emblem of the island, and, paradoxically, an invaluable source of life. The sandy, volcanic soils are richly fertile and coupled with good rainfall sustain a wide range of crops. The sandy soils also provide an effective barrier to phylloxera, maintaining a precious resource of venerable un-grafted vines. 

With the help of the legendary Salvo Foti, Mario and Manuela Paoluzi founded I Custodi (The Custodians) with the intention of honouring the traditions of Etnean winegrowing. No synthetic chemicals are used and the fruit, from traditional alberello (head-trained) old-vine plots, is handled in a gentle, natural way.
