The sandy soils also provide an effective barrier to phylloxera, maintaining a precious resource of venerable un-grafted vines.
With the help of the legendary Salvo Foti, Mario and Manuela Paoluzi founded I Custodi (The Custodians) with the intention of honouring the traditions of Etnean winegrowing. No synthetic chemicals are used and the fruit, from traditional alberello (head-trained) old-vine plots, is handled in a gentle, natural way.
